Capreolus is a family-owned artisan charcuterie producer in West Dorset run by Karen and David Richards. Following time honoured techniques they use free-range or wild meat to produce a wide range of charcuterie. All of the recipes have been developed by David and Karen with inspiration from traditional continental products but with their own West Country twist. They have won numerous awards for their products including 10 products that have been awarded 3 Stars at The Great Taste Awards, numerous 2 and 1 Star awards, and many Taste of the West awards including Supreme Champion for their Guanciale.
